Baking Walkthrough
  1. Preheat oven to 375°F (190°C). Grease an 8x8-inch or 9x9-inch ceramic baking dish with butter or coconut oil.
  2. In a large mixing bowl, toss rolled oats, baking powder, ground cinnamon, nutmeg, and sea salt until evenly combined.
  3. Spread the diced honeycrisp apples evenly across the bottom of the prepared baking dish. Scatter the dry spiced oat mixture evenly over the apples.
  4. In a medium glass pitcher or bowl, whisk together the milk, eggs, maple syrup, melted butter, and pure vanilla extract until completely incorporated.
  5. Slowly pour the spiced custard liquid evenly over the oats, allowing it to naturally seep down through the crevices and submerge the oats completely.
  6. Decoratively arrange the thinly sliced apple crescents across the top of the oats. Scatter chopped pecans evenly around the apples.
  7. Bake at 375°F (190°C) for 35 to 40 minutes until the top is golden-brown, the edges are lightly bubbling, and the custard center is softly set.
  8. Cool for 10 minutes before slicing into warm generous squares. Serve with a drizzle of warm maple syrup and a splash of cold cream or milk!

Notes

Chef Secret: Layer your diced apples beneath the dry oats before pouring the liquid custard over top! As the oatmeal bakes, the apples caramelize in their own natural juices against the ceramic dish, creating intensely jammy pockets of sweet spiced fruit throughout the bake.
