Dish Prep & Custard Assembly
- Generously butter a 9x13-inch ceramic or glass baking dish. Arrange the cubed brioche bread evenly throughout the prepared dish.
- In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, pure vanilla extract, 1/2 tsp ground cinnamon, nutmeg, and fine sea salt until smooth and frothy.
- Evenly pour the custard mixture all over the cubed brioche. Gently press down on the cubes with a spatula so every piece absorbs the rich custard.
Cinnamon Swirl & Baking
- In a small bowl, stir together the melted butter, dark brown sugar, and 1 1/2 tablespoons of ground cinnamon until a thick, pourable paste forms.
- Drizzle and swirl the cinnamon brown sugar mixture generously all over the top and deep into the crevices of the custard-soaked bread cubes.
- Bake at 350°F (175°C) for 35 to 40 minutes (or 45 minutes if chilled overnight) until puffed, deeply golden on top, and the custard center is just set.
Cream Cheese Glaze & Serving
- While the casserole bakes, beat together the softened cream cheese and butter until fluffy. Gradually add the powdered sugar, vanilla, and warm milk until a silky, pourable glaze forms.
- Allow the casserole to rest for 5 minutes after removing from the oven, then drizzle the warm cream cheese glaze generously all over the top.
- Slice into warm squares and serve immediately with fresh berries, maple syrup, and hot coffee.
