- In a large heavy-bottomed Dutch oven or stockpot, heat 2 tablespoons of extra-virgin olive oil over medium heat. Add diced onion, carrots, and celery (the classic Italian soffritto). Sauté for 6 to 8 minutes until softened and translucent.
