Ingredients
  

Pastry Cups & Creamy Brie Foundation
  • 1 sheet (approx. 8 oz) all-butter puff pastry thawed according to package instructions but kept cold, cut into 24 squares
  • 8 oz French brie cheese chilled for clean slicing, cut into 24 bite-sized cubes
  • 1 tbsp unsalted butter melted, for brushing mini muffin tin
Spiced Cranberry & Pecan Filling
  • 3/4 cup whole berry cranberry sauce homemade or high-quality jarred spiced whole berry sauce
  • 1/2 cup raw pecans coarsely chopped and lightly toasted
  • 1/4 tsp ground cinnamon whisked into cranberry sauce for holiday aroma
  • 1 pinch ground nutmeg freshly grated
Finishing Garnishes
  • 2 tbsp pure clover honey warmed for gentle finishing drizzle
  • 24 small sprigs fresh rosemary tiny tips tucked into each bite for festive presentation
  • 1 pinch flaky sea salt such as Maldon, for delicate savory contrast

Method
 

Assembly & Baking Walkthrough
  1. Preheat your oven to 375°F (190°C). Generously grease the wells of a 24-cup mini muffin tin with melted butter or non-stick cooking spray.
  2. Unroll the thawed puff pastry sheet on a lightly floured surface. Using a pizza cutter or sharp knife, cut the pastry into 24 equal squares (a 4x6 grid).
  3. Press each pastry square gently into a muffin cup, allowing the four pastry corners to point upward above the rim.
  4. Cut the cold brie wheel into 24 equal cubes (leaving the rind on is completely fine and traditional). Place one cube of brie into the center of each pastry cup.
  5. Top each cube of brie with 1 generous teaspoon of whole berry cranberry sauce, then scatter the chopped toasted pecans evenly over the top.
  6. Bake at 375°F for 14 to 16 minutes until the puff pastry corners are deep golden-brown, puffed, and crisp, and the brie cheese is melted and bubbling.
  7. Allow to cool in the pan for 5 minutes so the pastry sets, then transfer to a festive serving board. Drizzle each warm bite with clover honey, top with a tiny fresh rosemary sprig and a tiny pinch of flaky sea salt, and serve warm!

Notes

Chef Secret: Keep the brie cheese chilled right up until you slice it into cubes. Cold brie slices cleanly without smearing, allowing it to melt evenly inside the puff pastry cups in the oven without prematurely boiling over!
