Ingredients
  

Ultra-Creamy Whipped Feta Base
  • 8 oz Greek feta cheese in brine drained, authentic sheep and goat milk feta
  • 1/2 cup plain whole-milk Greek yogurt cold
  • 4 oz cream cheese softened to room temperature
  • 3 tbsp extra virgin olive oil cold-pressed, plus more for drizzling
  • 1 tbsp fresh lemon juice freshly squeezed
  • 1 clove garlic finely grated on microplane
  • 1/4 tsp fine sea salt & cracked black pepper to taste
Infused Warm Hot Honey & Toppings
  • 1/3 cup pure clover honey high-quality raw honey
  • 1 tsp crushed red pepper flakes adjust to desired spice level
  • 1 tbsp fresh thyme leaves stemmed
  • 1/3 cup roasted salted pistachios roughly chopped
  • 1/2 tsp flaky sea salt for garnish
For Serving
  • 4 pieces warm pita bread or naan cut into triangles
  • 2 cups crunchy crudites sliced cucumber rounds, baby bell peppers, and radishes

Method
 

Whipped Feta & Infused Hot Honey Walkthrough
  1. In a food processor fitted with the S-blade (or high-speed blender), combine crumbled feta cheese, whole-milk Greek yogurt, softened cream cheese, extra virgin olive oil, fresh lemon juice, grated garlic, and cracked black pepper.
  2. Process on high speed for 3 to 4 minutes, pausing once or twice to scrape down the sides of the bowl with a rubber spatula, until the mixture transforms from grainy curds into an impossibly smooth, velvety, cloud-like mousse.
  3. While the feta whips, prepare the warm hot honey: in a small saucepan over medium-low heat, combine pure honey, crushed red pepper flakes, and fresh thyme leaves. Warm gently for 2 to 3 minutes until bubbling slightly and deeply fragrant. Remove from heat immediately so the honey does not burn.
  4. Spread the whipped feta into a wide shallow serving bowl or ceramic platter, using the back of a large spoon to create generous swirling dips and ridges on the surface.
  5. Generously spoon the warm, spicy thyme-infused hot honey over the whipped feta, allowing it to pool in the swoops and ridges. Scatter chopped roasted pistachios and flaky sea salt over the top. Serve immediately alongside warm toasted pita triangles and crisp garden crudités!

Notes

Chef Secret: Feta alone can taste overly salty and chalky when whipped. Blending authentic sheep milk feta with equal parts cream cheese and Greek yogurt cuts the sharp salinity while producing that coveted cloud-like, silky restaurant texture!
