Crispy Smashed Potatoes

Deliciously crispy on the outside and fluffy on the inside, these smashed potatoes are a perfect side dish for any meal.

Ingredients
  

Potatoes
  • 2 pounds Yukon Gold Potatoes or any waxy potato
Seasoning
  • 1 teaspoon Salt for boiling
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika smoked or sweet
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Olive Oil for drizzling
  • 2 tablespoons Fresh Parsley chopped, for garnish

Method
 

Prepare the Potatoes
  1. Wash and scrub the potatoes, then place them in a large pot. Cover with water and add 1 teaspoon of salt.
  2. Bring to a boil and cook for about 15-20 minutes, or until fork-tender.
Smash and Season
  1. Preheat your oven to 450°F (230°C).
  2. Drain the potatoes and let them cool slightly. On a baking sheet, place the potatoes and gently smash each one with a fork until flattened but still intact.
  3. Drizzle the smashed potatoes with olive oil and sprinkle with garlic powder, paprika, black pepper, and additional salt if desired.
Bake
  1. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and crispy.
  2. Remove from the oven and garnish with chopped parsley before serving.

Notes

For extra crispiness, you can broil the potatoes for an additional 2-3 minutes after baking.
