A tender and flavorful grilled flat iron steak, marinated to perfection and served with a side of chimichurri sauce.

Ingredients
  

Steak
  • 2 pounds flat iron steak trimmed
Marinade
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic minced
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
Chimichurri Sauce
  • 1 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic minced
  • 1/2 teaspoon red pepper flakes optional
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground

Method
 

Marinate the Steak
  1. In a mixing bowl, combine olive oil, soy sauce, red wine vinegar, garlic, black pepper, salt, and oregano. Mix well.
  2. Place the flat iron steak in a resealable plastic bag and pour the marinade over it. Seal the bag and refrigerate for at least 1 hour, preferably overnight.
Prepare the Chimichurri Sauce
  1. In a bowl, combine chopped parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and black pepper. Mix until well combined.
  2. Set aside to let the flavors meld while the steak marinates.
Grill the Steak
  1. Preheat the grill to high heat.
  2. Remove the steak from the marinade and discard the marinade. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.
  3. Use a meat thermometer to check for an internal temperature of 130°F (54°C) for medium-rare.
Serve
  1. Remove the steak from the grill and let it rest for 5 minutes before slicing.
  2. Slice against the grain and serve with chimichurri sauce on the side.

Notes

For best results, allow the steak to marinate overnight. Adjust the seasoning in the chimichurri sauce to taste.
