Horchata

A refreshing Mexican beverage made from rice, milk, vanilla, and cinnamon, perfect for cooling down on a hot day.

Ingredients
  

Base Ingredients
  • 1 cup long-grain white rice rinsed and drained
  • 5 cups water for soaking and blending
  • 1 cup milk can substitute with almond or oat milk for a dairy-free version
  • 1 cup sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon plus more for garnish
  • 1 pinch salt

Method
 

Prepare the Rice
  1. Soak the rinsed rice in 2 cups of water for at least 4 hours or overnight.
Blend the Mixture
  1. Drain the soaked rice and place it in a blender with the remaining 3 cups of water. Blend until smooth.
Strain the Mixture
  1. Strain the blended rice mixture through a fine mesh strainer or cheesecloth into a bowl or pitcher.
Add Remaining Ingredients
  1. Stir in the milk, sugar, vanilla extract, ground cinnamon, and salt until well combined.
Serve
  1. Serve chilled over ice, garnished with a sprinkle of cinnamon if desired.

Notes

Horchata can be stored in the refrigerator for up to 5 days. Shake well before serving as ingredients may settle.
