Ingredients
  

Cornbread Batter
  • 1 cup cornmeal preferably fine or medium grind
  • 1 cup hot water boiling water works best
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil plus more for frying

Method
 

Prepare the Batter
  1. In a mixing bowl, combine cornmeal and salt.
  2. Gradually add hot water, stirring until a thick batter forms.
  3. Stir in vegetable oil until well combined.
Cook the Cornbread
  1. Heat a skillet over medium-high heat and add enough oil to coat the bottom.
  2. Once the oil is hot, use a ladle to pour batter into the skillet, forming small patties.
  3. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  4. Remove from skillet and drain on paper towels.
