  • 2 cans (15 oz each) chickpeas (garbanzo beans) rinsed, drained, and thoroughly dried with paper towels
  • 2 tbsp extra virgin olive oil cold-pressed
  • 1 tsp ground cumin
  • 1 tsp smoked paprika Spanish sweet smoked
  • 1/2 tsp garlic powder
  • 1/2 tsp fine sea salt
  • 1/4 tsp cracked black pepper
Grain Bowl Base & Fresh Mediterranean Vegetables
  • 3 cups cooked pearl couscous or quinoa cooled slightly or room temperature
  • 2 cups Persian cucumbers sliced into bite-sized half-moons
  • 1 1/2 cups cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and sliced in half
  • 1/3 cup pickled red onions thinly sliced
  • 6 oz feta cheese authentic block in brine, crumbled into rustic chunks
  • 1/4 cup fresh dill and mint roughly chopped
Zesty Lemon Herb Dressing
  • 1/3 cup extra virgin olive oil first cold pressed
  • 3 tbsp fresh lemon juice freshly squeezed from 1 large lemon
  • 1 clove garlic finely minced or grated on microplane
  • 1 tsp dried oregano crushed between palms
  • 1 tsp pure honey to balance citrus acidity
  • 1/2 tsp sea salt and cracked black pepper to taste

Method
 

Crispy Chickpea Roasting & Bowl Assembly Walkthrough
  1. Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Spread drained chickpeas across a double layer of paper towels and roll gently to remove all surface moisture. Discard any loose skins.
  3. Transfer dried chickpeas to the baking sheet. Drizzle with 2 tablespoons olive oil and toss with ground cumin, smoked paprika, garlic powder, sea salt, and black pepper until evenly coated. Roast for 20 to 25 minutes, shaking the pan halfway through, until crunchy and deeply golden.
  4. While the chickpeas roast, prepare the dressing: in a small mason jar, combine extra virgin olive oil, fresh lemon juice, minced garlic, dried oregano, honey, salt, and black pepper. Seal and shake vigorously until emulsified.
  5. Assemble lunch bowls: divide the cooked pearl couscous or quinoa evenly among 4 meal prep bowls. Arrange neat sections of sliced cucumbers, halved cherry tomatoes, Kalamata olives, pickled red onions, and rustic chunks of crumbled feta.
  6. Top each bowl with a generous mound of warm crispy roasted chickpeas. Drizzle zesty lemon herb dressing over top and garnish with freshly chopped dill and mint. Serve immediately or seal for weekly meal prep!
