Ingredients

Vegetables, Fruits & Aromatics
  • 1 large (approx. 3 lbs) butternut squash peeled, seeded, and cut into 1-inch cubes (about 6-7 cups)
  • 1 medium Honeycrisp or Gala apple peeled, cored, and roughly chopped
  • 1 medium yellow onion chopped
  • 4 cloves garlic smashed and peeled
  • 2 tbsp extra-virgin olive oil
Savory Broth & Warm Autumn Spices
  • 4 cups low-sodium vegetable or chicken bone broth
  • 2 tbsp pure maple syrup Grade A dark amber
  • 6 fresh sage leaves whole, plus extra for crispy garnish
  • 1/2 tsp freshly grated nutmeg
  • 1/4 tsp ground cinnamon
  • 1 tsp fine sea salt or to taste
  • 1/4 tsp freshly cracked black pepper to taste
Creamy Finish & Crunchy Garnishes
  • 1/2 cup full-fat canned coconut milk or heavy cream stirred in after blending, plus extra for swirl
  • 1/3 cup raw pepitas (pumpkin seeds) toasted in a dry skillet with a pinch of sea salt
  • 6 slices crusty artisan sourdough bread warm and grilled for dipping

Method

Slow Cooker Layering & Simmering
  1. Add the cubed butternut squash, chopped apple, yellow onion, smashed garlic cloves, and fresh sage leaves to the slow cooker insert.
  2. Pour in the broth, olive oil, and pure maple syrup. Season with fine sea salt, black pepper, freshly grated nutmeg, and ground cinnamon. Stir gently to distribute the seasonings.
  3. Cover and cook on LOW for 6 to 8 hours (or on HIGH for 3 to 4 hours) until the squash and apples are fork-tender and collapse easily.
Blending to Silky Perfection & Finishing
  1. Remove the slow cooker lid and discard the whole sage leaves if desired (or leave them in for bolder herbal depth). Using an immersion hand blender directly in the pot, puree the soup until ultra-smooth, creamy, and velvety.
  2. Stir in the coconut cream or heavy cream until fully incorporated. Taste and adjust seasoning with additional sea salt or black pepper if desired.
  3. Ladle the steaming soup into shallow ceramic bowls. Drizzle with an artistic swirl of cream and a touch of olive oil, and garnish generously with toasted pepitas, crispy fried sage, and cracked black pepper. Serve warm with grilled sourdough bread.
